Hi, I am Patti Saner… this is my 13th year (I think) teaching at NPHS. I previously taught 10 years in southern Missouri. I am one of three FCS instructors. I currently teach Intro to Foods & Nutrition, Culinary 1 and Culinary 2. I am looking forward to adding Baking and Pastry back into my schedule next year.
Intro to Foods learn a wide variety of skills from food safety, basic measuring, reading a recipe, recipe math, as well as nutrition and budgeting.
Culinary 1 & 2 are centered around foodservice safety, sanitation and improving cooking skills.
Culinary 1 has studied Stocks, Sauces, & Soups, Menu Writing and Design, Culinary Math (costing a recipe, increasing and decreasing recipe size), measuring with a scale, Mise en Place and many labs practicing these skills learned in the classroom.
Culinary 2 has studied Fruits and Vegetables, Breakfasts, Pasta (made from scratch), Grains, and Legumes. They just completed the Meats, Poultry, and Fish unit. A new skill was learning how to cut up a chicken, debone the breast and cook chicken cutlets with different sauces. A favorite lesson was to grade beef steak, cook it and evaluate the taste/tenderness. The last unit will be Global Foods and of course a summative lab final that the students will plan and execute.

As we’re wrapping up 2022 let's sing some praise on what is going on in the Activity Department . Coach Jahnke and his Swim and Dive team have been mushing the competition. Coach King and the Speech team are like a throwback to the City Caroling days. Everywhere they go people are listening to an awesome group. The Wrestling team must have put in a little extra time during the preseason at the hard candy factory. They have been twisting up their opponents. The Hoop teams are off and shopping. They ‘ve wrapped up and put some great wins under the tree this year. The Activity Department, Coaches , Sponsors and participants want to wish everyone a safe Happy Holiday!
