Mascot Winner / Employment Opportunity/Dr. Seuss Week
Hello Spring Creek Families,
We have our Materials Exchange Day this Wednesday, March 3rd from 7:30 AM to 3:30 PM
We are getting ready for hybrid in -person learning. The district is updating you on the status of reopening each week. If your child attends Matanzas Extended Care, and you have requested hybrid in-person learning at Spring Creek, transportation will be provided to and from campuses. Our hybrid start date is tentatively scheduled for March 15th, but that depends on covid cases and our county public health department. We will update you with in- person hybrid start times and all of the details as soon as they are approved. We are so excited to see your beautiful children and hope that we can open soon.
Mascot Announcement: Our new mascot will be announced to the students in zoom class tomorrow. Then I will message families.

Sneaky Spinach Green Eggs and Ham
Sneaky Spinach Green Eggs and Ham
Serves 2-4
While you can certainly use green food coloring to make green eggs and ham, try using spinach as a super healthy alternative. It turns the eggs a vibrant green color and adds extra fiber, iron, and a big dose of Vitamin A. The best part? Your kids will never know what hit 'em! Better yet, let them help and show them that greens are great!
Ingredients:
4 eggs
2 oz. baby spinach (2 good sized handfuls)
2 Tbsp. milk, milk alternative, or water
1 tsp. butter, oil, or cooking spray
8 slices of deli ham
Seasoning to taste
Equipment:
Blender or food processor
Bowl or large measuring cup
Whisk
Skillet, non stick
Spatula
Crack eggs into a large bowl or measuring cup, and whisk until blended.
In a blender or food processor, add spinach and milk or milk alternative and blend on high speed for about 30 seconds, or until spinach and liquid are well combined. If spinach is still in small bits, add a bit more liquid and blend a while longer.
Pour spinach mixture into beaten eggs, and whisk in, until eggs are uniformly green.
Heat a non-stick pan over medium-low heat. Add a teaspoon of butter, oil, or cooking spray.
When pan is hot, pour in egg-spinach mixture. Use a spatula to stir eggs occasionally until they are no longer runny and cooked through.
Remove eggs to a serving bowl and add slices of ham to the skillet. Heat for a few seconds on each side, if desired.
Serve warmed ham with the green eggs.
