This newsletter will provide you with information on emotional, mental, physical, and nutritional health. We will focus on how to help you be proactive about your health and well-being. The EWS Newsletter will also provide support & guidance resources that we hope will assist you in dealing with stressors and challenges.
Managing and Coping COVID19 Fears
How to stop the "what-ifs" from spiraling
Relinquishing our desire for certainty and control is easier said than done. If you feel yourself start to spin out into negativity or panic, grounding yourself in the present moment can stop the negative spiral and allow your rational brain to come back online.
The technique is simple yet effective:
Bring your attention to your breath and your body. Focus all of your attention on the here and now: noticing the sights, sounds, and smells around you and what you’re feeling in your body. Continue to breath slowly in and out—gently bringing your mind back to your body and breath every time it drifts—until you feel more calm.

Keep things in perspective
Limit worry and agitation by lessening the time you spend watching or listening to upsetting media coverage. Take a break from watching the news and focus on the things that are positive in your life and things you have control over

Anxiety
This emotion can leave you feeling helpless and overwhelmed. Acknowledge your anxiety with understanding, and then turn your mind to other things:
“It’s understandable I am concerned about the current situation, AND I understand that worry is not an effective way to respond.”
Practice mindfulness and acceptance
Focus on asking “what now” rather than “why.” Practice patience with yourself and others. Let things unfold and assume others are trying to do the right thing.
Focus on rational rather than emotional responses and engage in active problem solving. Find out who is available to answer your questions, provide accurate information and guide you.

BBQ Ideas
Potato Salad
INGREDIENTS
3 lb. yukon gold potatoes, chopped into 1” pieces
kosher salt
1 1/2 cups mayonnaise
1 small red onion, finely chopped
1 tbsp. Dijon mustard
1 tbsp. lemon juice
1/4 cups chopped pickles
1/2 tsp. paprika
4 hard boiled eggs chopped
1/4 cup finely chopped chives
Freshly ground black pepper
Butterhead lettuce, for serving
DIRECTIONS
In a large pot, cover potatoes with water and season generously with salt. Bring water to a boil and cook until potatoes are easily pierced with a knife, 12 to 15 minutes. Drain and let cool slightly.
In a large bowl, combine mayonnaise, red onion, Dijon mustard, lemon juice, pickles and paprika. Stir until well combined. Fold in cooked potatoes, eggs, and chives, then season with salt and pepper. Refrigerate until ready to serve.
Serve over butterhead lettuce.
BBQ Chicken
INGREDIENTS
2 cups BBQ source
Juice of 1 lime
2 tbsp. honey
1 tbsp. hot sauce
Kosher salt
Freshly ground black pepper
1 lb. boneless skinless chicken breasts (or drumsticks)
Vegetable oil, for grill
DIRECTIONS
In a large bowl, whisk together barbecue sauce, lime juice, honey, and hot sauce and season with salt and pepper. Set aside 1/2 cup for basting.
Add chicken to bowl and toss until coated.
Heat grill to high. Oil grates and grill chicken, basting with reserved marinade, until charred, 8 minutes per side for breasts, and 10 to 12 minutes per side for drumsticks.
The Best Burger Ever
INGREDIENTS
1 lb. ground beef
Kosher salt
Freshly ground black pepper
3 slices cheese, such as yellow cheddar
FOR SERVING
3 hamburger buns
1 large tomato, thinly sliced
1 small red onion, thinly sliced
3 leaves butter or iceberg lettuce
Ketchup
Mustard
Mayonnaise
DIRECTIONS
Shape beef into 3 equally sized patties, about 3 1/2" wide. Season both sides of each patty liberally with salt and pepper. Using your finger, press a shallow indent into the center of each burger.
If cooking in skillet: Heat skillet to medium-high heat and cook patties until crust develops and they're no longer pink, 6 minutes per side for medium. If using cheese, top on patties 2 to 3 minutes before burger is finished cooking.
If grilling: Heat grill or grill pan to high. Grill patties until crust develops and they're no longer pink, 6 minutes per side for medium. If using cheese, top on patties 2 to 3 minutes before burger is finished cooking.
Place patties on buns and add preferred toppings before serving.
